QotD: Vox Potluck

If your Vox Neighborhood had a potluck dinner tonight, what dish, drink or dessert would you bring?

Okay, I don't make this much because it's eeeeevilllll…in a good way. By which I mean I can't stop eating it until I roll off the couch, groaning, in a tater coma. 


Tater Tot Casserole


You can divide this recipe into 2 or 3 freezer-to-oven-safe casserole dishes and bake one and freeze the rest; to bake I put the frozen dish into the cold oven and then turn on the heat to avoid thermal shock. I usually add frozen green beans to give this dish some redeeming value. A thawed bag of shredded hash browns makes a nicer looking dish for formal occasions.


1 package tater tots

8 oz sour cream (or more depending on your taste)

1 can Campbell's cream of potato soup

2 cups cheese, shredded (or more depending on your taste)


Preheat oven to 350.


Mix 1 cup of cheese, sour cream and soup together.


Add tater tots. Mix well.


Pour into a 9 by 13 greased casserole dish.


Cover with cheese.


Bake at 350 for 45 minutes or so. You may want to cover with foil the last 10 to 15 minutes of baking to keep from getting too brown.

    Yay! It's winter, so I won't mind running the oven for an hour. *goes off to write the ingredients on a shopping list*

  6. Let me know how it comes out! I like to add red pepper flakes, but that's not to everyone's taste.
